A nice simple recipe to make a make Nettle Champ a mash with nettles, and onions. It could easily be adjusted to Nettle Soup. This recipe gives you all the stages from foraging for your nettles, to preparing them to cooking your meal up on a camp fire.

Ingredients

  • 1 Large Potato Scrubbed and chopped finely
  • 1 Onion, white or red Scrubbed and chopped finely
  • 1 Pint Nettle tops (top four leaves) Packed tightly
  • 2 Knobs Butter
  • 1 Veg Stock Cube

Instructions

  • Pick your nettles – I suggest wearing gloves – Take just the top four leaves off each plant. Try to pick nettles that are taller than the back leg off a dog, especially if your at the side of paths. And ensure you pick the nettles before they come to flower. Rinsing them is advised.

  • Scrub the potato and chop it up finely.

  • Chop the onion up finely.

  • Chop the nettles finely. I hold them with a spatula to do this – it stops you getting stung.

  • Melt a good sized block of butter in the pan

  • Sweat the onions off in the pan

  • Add the potoates and gently fry them off

  • Add the stock, till it’s just covering the potatoes

  • Simmer covered for 15 minutes

  • Add the nettles and stir in fully – They loose their sting as they are heated.

  • Mash the mix – either by beating it with a spatula or with a masher. I added more stock to do this.
